Thistlerock’s very own head mazer, Doug Suchan, has deep roots tied to honeybee stewardship - and we are happy to bring the unique flavor profiles of Midwestern honey to our Tavern & Honey Library.

The Suchan family are 4th generation beekeepers, who’s quirky name, Fat Head Honey Farm, is inspired by their three bulldogs. The farm beholds a rich tapestry of sweet clover, alfalfa, and wildflowers for their bees to collect and feast upon, resulting in an exquisite tasting experience.
